1 small red onion, cut in half, then sliced
1 English cucumber, cut in quarters lengthwise and sliced in 1" cubes
1 red pepper, diced
1 green pepper, diced
1 yellow pepper, diced
4 tomatoes, cut in wedges
1 cup Greek olives
1 cup crumbled Feta cheese
1⁄2 cup olive oil
2 tbsp lemon juice or red wine vinegar
1 garlic clove, crushed
1 tsp dried mint
- Whisk together all dressing ingredients.
- Add all vegetables, Greek olives and Feta cheese, toss gently and serve immediately.
